Mexico has so many wonderful fruits and fresh veggies--- just be CAREFUL not to eat from street vendors, no matter how tempting their wares! You will probably be eating a lot of raw things, so be fastidious! Better to buy stuff whole and unpeeled.
If you are staying in a place with a kitchen it really does help to prepare your own food when possible. You need your stuff well washed--- dysentery is a drag!
A difficulty that I found was that many of the restaurants use lard in the refried beans. Ask.

Mexicans eat plenty of veggies, but often their dishes are flavored with meat. You need to be able to speak enough Spanish to ask for "no Carne, no Juevos, and no Queso, por favor".

It shouldn't be too hard to find vegan food in Cancun. I've been doing a lot of traveling lately and I'm surprised about how much vegan food I can find.
I live in China right now. I wouldn't say it's as easy as it is in America, but veganism is really not that hard to find anywhere I've been.

No there are lots of great vegan or veggie dishes that are Mexican.
the key is to trust the sanitary conditions.
produce has to be washed and a lot of people have problems with the water in Mexico and forget about the fact that food is washed in tap water.
but lots of bean and rice and tomato dishes to be had.
Try tofu....its always the BEST alternative!

Typically there are a lot of fresh fruits and salads available. You can probalby do it, but it won't be easy since you will likely have to rely on restaurants for most (or all?) of your meals. Good luck!
No ..it will not be as I have spent vacation in Cancun..(I am vegan) ...they are more used to tourists then let's say a small town would be and have visitors from all over the world.....just make it clear that if the beans contain lard ..animal fat you can not eat them...you can find corn/black bean tomales that are vegan.....,sauteed vegetables, ........some soups ....salads and fruits are a given ...just ask and many can accommodate you...have a great trip it is beautiful...
try sticking to it there are alot of fruits and veggies there
I am of the opinion that it's difficult to eat a vegan diet ANYWHERE. Not because it's hard to find, but because it sucks!!
As it's near the equator you will need to eat something heavy to counteract the effect of the earth's rotation.
(I'll bet some people on this site would actually believe that!!)
