Not just vegetables. You need fruits, grains, and fluids, like water. Just eat a well-balanced meal, and don't eat 3 hours before your bedtime*. Make sure you also don't eat anything extra after your last meal of the day.

It is possible if your vegan diet include fresh fruit %26amp; veggies, whole grains and lean proteins. You won't if it includes cheetos, french fries and soda.
