Your body needs salt. It also needs protein and fats, which is a lot harder to get without nuts and grains, although some people manage with lots of heavier fruits/veggies like avocado and bananas, and iron-rich plants like kale or seaweed. (Possibly seaweed would contain enough salt, if you had enough of it.)
It sounds like that diet would be okay for a little while, but not a lifelong diet without a lot of extra work.
Any time you decide on a specifically-restricted diet, you need to research how to get all the nutrients your body needs. I know some people on raw foods, and they have to be very careful about finding enough of the right foods. It pretty much only works in urban areas, where the stores have year-round access to all kinds of fruits %26amp; veggies. You won't get nearly enough nutrition with a diet like that. You certainly will not get all of the eight essential amino acids (proteins are chains of some of the 24 amino acids, eight of the 24 are not produced by the body and must be eaten: vegetables have some, but not all of them). Guess what happens when you don't eat enough of these essential amino acids? Your body starts to digest its own muscle to obtain the necessary amino acids. Not pretty, huh? You also won't get enough variety of vitamins and minerals. You'll probably get enough phytochemicals and fiber, but will be seriously lacking necessary nutrients. Slow suicide.
You need nuts/seeds if you are to start a raw vegan diet, it has protein.
Some fruits and veggies have protein, but very little. More than a lot would have to be consumed to get the least recommended amount. I've been a raw vegan for about 7 years, and even I couldn't do this. If you drank nothing but water then you will be low in certain nutrients like b12, calcium..etc.
I drink rice milk to get b12 and calcium. occasionally almond milk.
If you consumed only that, then your body will be fine for a few days, maybe 2 weeks at most. You body will be absolutely clean, but you will get groggy and weak, and eventually anemic.VEGANS: What would happen if I followed this vegan diet?
If you eat only raw vegetables and fruit you might be missing large amounts of protein from your diet. Sure, vegetables have protein but even if you decide to go raw vegan, you'll need to include things like flax seeds, nuts and other seeds in your diet. Getting Omega 3 Fatty Acids are necessary for meat eaters and vegans alike.
I would check out some raw vegan websites for more information on how to eat a balanced diet :)

Raw vegan is better and if done properly and sensibly (adding a few more foods), the following will happen:

EDIT: Raw vegan is NOT a fad. If done properly, it is the best thing you can do for your health. Doctors know next to nothing about nutrition, they are simply pill pushers.

Salt is necessary to support the proper balance between the inside of the membranes and the outside. Salt is important to the functioning of the adrenal glands. If you have normal or low blood pressure then there is no problem eating salt.

Without adding protein and your B vitamins you will die. Most food, especially proteins need to be denatured so your body can digest them. You can do this with fermentation, heat or acid (as in lemon juice).
Raw foods are a fad, and a very dangerous one. Please ask a doctor before you decide to eat only raw foods.
