By "cult" I think you mean fad, which may also mean she hasn't done too much research on being a vegan.
We absolutely do need protein. We don't, however, need to get it from animal sources. Broccoli, beans, and supplements are just a few of the ways she can get the protein she needs. B12 is also important, and can be found in flax or hemp seeds.
It's good that you're concerned about your friend. Keep trying to help her, but don't try to convince her that being vegan is the problem. Being an unresponsible vegan is the problem.

While we do need protein, we don't need the kind from meat or dairy.
Soy (like tofu, or soy milk), peanuts, and many other things offer great sources of protein without having to commit murder or ingesting the bodily fluid of another animal.
Not all vegans go through this. When I first became vegan I actually gained some weight. It sounds like your friend is taking this to an extreme. One really cannot live off of lettuce alone.
Since she seems to feel the need of a "cult diet", get her to read a book called "Skinny *****". It will help clear up what she does and does not need to be healthy.

I have not eaten meat in 25 years, still alive, BUT you have to start slow and supplement at first. Her body is used to a certain levels of B12, Iron and protein from her old diet. When you suddenly stop you crash, as she is. Especially women as their monthly menstration cycle pulls a lot out of them. She needs to supplement until her body adjusts and her diet knowledge improves.

Canada has the highest quality stuff out there and I have used this place numerous times myself, always was a fresh batch with long expire date. It is so hard to get B12 from a Vegetarian diet and taking a shot now is well worth not having to eat meat. Save an animal, take the shot.
Take a good liquid iron, not tablets. Tablets bind the system and can produce heart burn and constipation and absorption is only around 25%. Use a yeast free liquid and hold it in your mouth for one minute. Trans-mucosal absorption is the best was to get it in the body.
Tell her to have a morning smoothie with rice protein, flax seed oil and a multi vitamin powder and she will be fine.
Tell her to take some anthropology or human anatomy classes. Humans were clearly designed to function on meat. The easiest evidence to spot that points to this is our teeth. Incisors and canines, definitely meant for cutting and chewing meat. If we were supposed to be herbivores we would have mostly flat teeth meant to grind down vegetables.
