As with any diet, you have to find a balance. I try and balance carbohydrates, protein and fiber. Plenty of fresh fruits and vegetables are always good, as is tofu, tempeh, seitan, soy protein, TVP, legumes, nuts, seeds, rices and whole grain pastas. You can follow the Atkin's diet on a vegan diet, it just takes some very clever substitution! I think that on a vegan diet, as long as you're not eating more than one high-carb meal a day you're fine, all this nonsense about eating so few carbs is ridiculous. Being vegan eliminates the need for most "dieting" as you naturally stay thin and healthy!
You shouldn't worry about cutting carbs. You should worry about cutting REFINED carbs/sugars. That means none of the white stuff. Eat as much as you want of the complex stuff. Fruit is the perfect food.

You should always eat complex carbs, like whole grains and brown rice instead of white rice. If you consume only complex carbs, they shouldn't be a bother for you.
Hm, well, for me, I eat, then when I'm full, I stop eating. Pretty simple.
