How can I insure I have adequate nutrients, etc in a vegan diet?

I was vegan for a year and a half, but I got a chipped tooth and freaked out. Is there a good online resource to refer to about vegan nutrition? Are supplements ok? I have to take a medicine that depletes B vitamins. Thanks! How can I insure I have adequate nutrients, etc in a vegan diet?
The vegan society has a great section on nutrition:

A vegan diet does not provide most people with the most adequate vital vitamins and minerals such as vitamin B12. Vitamin B12 is not found biologically in any plant foods. People who have a brain usually take vitamin supplements or eat fortified foods that say they are fortified. Just because you;'re drinking soy milk or eat cereals, doesn't mean it's fortified with important nutrients.

Vitamin B12 deficiency in lactating vegetarian mothers has been linked to deficiencies and neurological disorders in their children. A maternal vegan diet has also been associated with low birth weight, and a five times lower likelihood of having twins than those who eat animal products.http://www.ncbi.nlm.nih.gov/pubmed/20445鈥?/a>

You are more likely to develop a deficiency disorder, have memory loss and/or disorientation, develop a neurological disorder, have Irritability and/or depression and/or personality changes, etc.http://www.ncbi.nlm.nih.gov/pubmed/15087鈥?/a>

If you don't like eating meat, then I suggest being a vegetarian diet. How can I insure I have adequate nutrients, etc in a vegan diet?
It's more likely to chip a tooth eating a lot of protein. And excess fat blocks nutrient absorption into cells.

Nature provides everything needed in its more common foods: Fruits and vegetables. Make sure some is organic. Fruit should be ripe (best from farmers markets)
