I guess you are talking about the processed soy or wheat protein burgers and sausages. You are better off without those anyway. Here are some examples of healthy vegan meals:
breakfasts:
beans on toast
big fruit salad
big fruit smoothie
banana on toast
jam/marmite/marmalade/peanut butter on toast
porridge made with non-dairy milk or water
muesli with non-dairy milk or juice
some cereals, but not all depending on the sources of the added vitamins, check the packet.
hash browns, mushrooms, tomatoes and beans
lunches:
peanut butter and jam sandwich
houmous and salad sandwich/roll/wrap/bagel etc
mixed salads including bean and grain salads (eg cous cous)
baked potato with beans
baked potato with vegetable chilli
soup and roll (some kind of protein soup eg lentil or bean)
leftovers from last night's dinner
dinners:
sweet and sour veg and tofu stir fry with rice or non-egg noodles
veg curry with rice
veg chilli with rice
mushroom risotto
non-egg pasta with tomato and veg sauce with lentils or beans in it
beany pie (shepherds pie but beans instead of meat)
veg and lentil stew and mashed potato
snacks/desserts:
fruit (of course)
houmous with bread sticks or veg sticks
nuts
seeds
crisps/chips
flapjack (made with non-dairy marge)
some dark chocolate is vegan

Vegan = No Animal By Products.
Meat, Eggs, Butter, Fat, Milk, Jello... ETC
Lacto Ovo = Vegetarian = Does not Eat Meat But will Eat

I think the first thing to do is to Determine if you want to be a
Vegan or Lacto Ovo!

vegan food is lentils and beans, not faux-meat. It's practically everywhere. Want to try tofu (not a requirement for being vegan, BTW), they are in practically every store (everyone wants to try to make homemade Chinese food). If you don't want to starve, have protein (i.e. beans and nuts) with every meal and snack. Don't want to lose weight? Portion control works both ways, just eat more.
Vegan food isn't just giving up meat, it's replacing it with protein from nuts, beans, and seeds. But you don't have to buy anything special for it, if you're eating those nuts, beans, seeds, etc. The only real concern is b12, from fortified cereals, soymilk (costco has this, I'm sure you have an equivalent), or multi-vitamins. It's not hard to find Vegan food in this country. I assume that your local store has vegetables, fruits, rice, barley, beans, nuts, and tortillas. The idea that vegans need "meat substitutes" is false. I don't eat any meat substitutes at all.

Jink: You couldn't be more wrong. Properly prepared vegan food is absolutely delicious and is very healthy. Vegans don't get diabetes, heart disease, colon cancer, hypertension, coronary disease, nor many other illnesses. Do your research before slamming someone's life choices.
I am also in the process of switching to vegan and i am almost vegan except for drinking cows milk. Dont try to become Vegan overnight. Change to a vegetarian and remain for about 6 months. During this time you need to consume a lot of proteins, amino acid rich foods. Then slowly try to cut down cooked foods and start consuming raw. According to your taste get some 9-10 recipes in hand.
Then you can try cutting down the dairy items. For cows milk try soya/rice milk.

I'd suggest getting a cookbook and working through those recipes, seeing what you like. I love the book "La Dolce Vegan" by Sarah Kramer. They are all easy and cheap and fast!
Some foods that are vegan by nature are Indian and Mexican cuisine.
The simplest way is to eat mostly at home and just not buy anything with milk/eggs/casein/gelatin/honey/meat. That leaves THOUSANDS of foods! Just experiment and have fun.
Good meat substitutes include seitan (easy to make) tofu (good marinated) and stuff you can buy already prepared.

Start with fresh salads,Steamed vegetables
hummus, Roasted vegetables sandwiches
nuts. Tomato stuffed with vegetables and rice You don't have to starve yourself just eat fresh.
Eat boca burgers or morning star chicken. They're all made of soy beans but taste exactly like chicken. And you can find them at any grocery store. ( walmart, costco, etc.)
umm you problably cant.. how about not being vegan. food taste terrible and its unhealthy
