Wow freaky, I'm a 17 year old girl and I have Celiac too (can't eat gluten)..though I also am a type 1 diabetic.
I'm also vegetarian. I have been for 3 years.
Honestly, it isn't that big of a change at all. I suggest you watch Food Inc. it's on Netflix.
The only way it impacted my life was it made me feel SO much better, energy wise and just over all. My skin rarely breaks out and my hair is always shiny since I switched to gluten-free (which was about 6 months ago now).
Don't get me wrong it doesn't happen magically. It took about 2-3 weeks before I saw real results. But even within 3 days, I felt much better.
As for not eating meat, that also has actually made me feel better. You don't realize how bloated and gross it makes you feel until you stop eating it for awhile. Natural peanut butter is the best for getting protien.
As for becoming a Vegan, I just asked a question about that today, but honestly for me personally I have a lot to worry about already. You'll find out gluten is in a LOT. And it does get tiring trying to figure it all out. The worst is when you accidentally eat something with gluten and you feel terrible the rest of the day.
I wouldn't switch immediately to vegan. Start with being a vegetarian (meaning you can still eat dairy and eggs) and see if you can keep that up for a couple months. Don't give up if you slip up a couple times, it's normal in the beginning.
Anyways, overall I would say definetly go off gluten, essentially everyone should not be eating gluten (america is really the only country that does) as it irritates everyones organs, just in some of us (with celiac) it really effects us badly. But even my sister went off it and she said she had more energy within days.
As I stated before I would switch to vegetarian first, then edge into being a vegan if you're serious about it.

I am not a vegan, but for some people, they lose weight. Many people are sensitive to gluten and the feel better (better digestion, more energy, less belly bloat) after a period of not eating gluten free foods. You have to make sure if you become a vegan that you still get enough protein and iron (especially as you are a teen girl). I suggest a vegan iron supplement to help like floradix. Also, combine your plant-based iron sources (beans, nuts, etc) with vitamin c to help your body absorb more iron.
Keep a diary of your progress. Many people feel worse when they make a lifestyle change. Sometimes they don't get enough nutrients or vitamins, sometimes they feel worse because their body is detoxifying. Remember to drink plenty of water (at least a liter for every 40 pounds of body weight) to help flush toxins out. Speak to other vegans and look in the library for books that will help you create easy, fairly simple but nutritious meals. Remember to get enough fat, too. Not all fat is bad for you. Avocados, in moderation, are very good for you, and so is coconut oil (despite what some people may say). Also add lots of extra virgin olive oil to your diet. If you use margarine, compare brands and try to find one full of plant sterols that helps lower cholesterol.
many whole foods stores, as well as regular grocery stores sell gluten free foods. Once you start to identify where and which brands are gluten free shopping will be easier. Try to make a list of nutritionally complete meals you can make easily (perhaps make a several days worth of meals at one time and freeze the extra ones?) It can be done with a little work, research and planning.
Some people tend to become anemic when they stop eating meat (stop ingesting heme-iron foods). I do. So watch yourself carefully. You may feel sick at first, but if you become listless, pale and tired and this lasts for more than a few weeks you might be anemic. Also try to remember, in addition to taking an iron supplement (the liquid floradix and floravit work well and taste good) to take a good multi-vitamin just to help yourself out.

Gradually you will develop lackluster skin, thinning hair and anemia. I don't believe this drastic way of life is healthy for a menstruating female, let alone one entering child bearing age (you might want kids in your 20s). As a former severe anemic, I implore you to reconsider. Instead of cutting everything out, why not focus on the quality an source of what you eat. I can see ditching gluten if you're sensitive. And you can cut down on dairy to the point where you just eat a little yogurt or goat's milk. But abstaining completely from meat is dangerous to your health. Humans are carnivores. Thats why we have carnivore teeth. Our bodies need the nutrients in meat to be healthy. I do realize that throngs of veg heads will dispute this, but I speak from experience. Its extremely difficult to replicate the nutrients and complete proteins you get from meat. You should ask your doctor before you make your decision.....or consult a nutritionist or naturopath. Millions of people across the planet live healthy lives without meat, dairy, or gluten. If you are not in a culture that lives like this, you need to do your research and learn to cook a variety of things.
Vegetables, beans, quinoa, rice, fruits...if you eat a variety of these you will be healthy.
you have to ask a nutritionist, as it is hard to cut things like this out of diet and still get nutrients, especially, gluten, which is in just about everything.. Also, be sure to do this change somewhat slowly so you will not shock your body.What impact will a gluten-free vegan diet have on me?
Well, the fact is some day you and everyone else will die. No diet is going to make you live longer. Try to enjoy your life and relax, because its only temporary.
You may feel lethargic Bad tempered angry and emotional, vegans don't realise their bodies NEED the vitamins minerals and nutrients provided by animal meat, especially of you are Caucasian (White)
