Veggies, fruit, tofu, soy cheese, soy milk, legumes, water, rice, pasta, bread, soy ice-cream, we can eat basically eat everything that non-vegans can we just supplement meat and dairy :-)What do you eat one a Vegan Diet?
I agree with the poster who said to go really simple, and to eat mostly whole foods. My approach is the same. I am pretty health conscious and I try to stay away from gluten, which limits me a bit more. But even avoiding gluten and processed foods, there are tons of things I eat. I am also weary of too much soy - I use tofu in stir fries but stay away from soy milk and soy meats. Instead I use rice milk, which is more natural/less processed. I use Earth Balance buttery spread, a vegan margarine, when I need a butter substitute, and Ener-G egg sub is useful in baking.
What I DO eat...
Breakfast: Oatmeal with raisins or fruit or chopped nuts, fruit salads or smoothies, granola or cereal with rice milk. If you wish to, you can make vegan versions of breakfast foods like pancakes/waffles, and you can have toast with margarine or jam.
On the go: Even fast food restaurants usually have several options. If you go to Peta's website, they have a list of what you can eat at chains. In general, ethnic food is usually better - i.e. Chinese, Japanese, Indian, etc. In those cuisines there are usually vegetable dish sections on the menu, that you can get with rice. American food is not the best, but you could have a plain baked potato, salad, rice pilaf, etc.

Stir fries (veggies, tofu) with rice - endless variations here
Noodle stir fries with vegetables
Curries/dahls with rice
Vegetable sushi %26amp; miso soup
Baked potato with sauteed veggies
Rice pilaf with vegetables
Lentil soups/stews
Vegetable soups/stews
Bean chilli with corn bread
Grilled vegetable kabob with rice pilaf
Mexican rice %26amp; bean dishes: tostadas, tacso, burritos, etc.
Pasta dishes
Spinach salad with candied pecans, sliced pears, and dried cranberries
Iceberg lettuce salad with alfalfa sprouts, kidney beans, cucumber, tomato, carrot
Greek salad with kalamata olives, cucumber, tomato, red onion
Dolmas, hummus, pita, orzo and wild rice salad

No animal products meaning meat or dairy or eggs. Strict vegans check out every single ingredient in a food. You gotta watch out for your B12 intake though. There are foods you can find it in like spirulina which is also packed with good protein too. Tastes disgusting, but it's great for you.
Vegan cooking is alot of fun though. Check out the book - How It All Vegan. Good recipes in there and they're not that hard to put together. Awesome cookie recipes.

as a vegan i eat fresh fruits and veggies, sometimes nuts, seeds and beans...
it really is that simple.
i try not to ingest processed foods, meat and things that make false claims like organic, cruelty free and free range, because i know better after all these years of study, experience and being there.

Don't eat: anything that contains anything from an animal.
Do eat: everything else.
Well if you are a vegan you only eat vegatables plain out!
So i guess that you only eat vegatables O_O. But make sure you eat enough nuts, natural 100% soymilk to get all your nutrients.
